Wooden vs metal pizza peel
Buy a metal peel to launch with and a bamboo one only if you also want a serving board. If you are buying one peel, buy metal. The reason is a single published number: the thinnest aluminium blade here measures 0.08 in at the edge and the thickest bamboo one measures 0.6 in — 7.5 times thicker. Getting a loaded pizza off a peel is entirely about how little of an edge has to slide under it.
There is a wrinkle in the question itself. Of the seven peels on this page, 3 publish a Handle Material field, and every one of those 3 is an aluminium peel. 2 of them say the handle is wood; the third says aluminium in that field while its own product highlight, on the same page, calls the handle wooden. The bamboo peels have no handle field for a good reason: they are cut from one board, so the handle is the blade. That is their structural weakness and their whole appeal at once. There is no joint to loosen, and equally no joint to replace when the thin part snaps.
Note the care row too. Both bamboo listings specify hand wash only; one aluminium listing does and the others publish nothing. Bamboo is a grass, it is laminated, and dishwasher heat delaminates it. That is not a small footnote on a tool you use with wet dough.

A raw pizza does not sit on a peel so much as cling to it. Every second it waits, the dough relaxes and wets the surface underneath, and the only way to get it off is to introduce an edge between the two. Metal is also the lighter one
This one runs against instinct. Aluminium sounds heavy and a wooden paddle sounds light, and the published weights say the opposite: every aluminium peel here comes in at or under 1.96 lb, and no bamboo peel with a credible published weight comes in below 2.29 lb.
The like-for-like pair makes it plainer. The American Metalcraft aluminium blade is 16 by 18 inches and weighs 1.96 lb. The LX LERMX bamboo blade is 16 inches and weighs 2.76 lb — 0.80 lb more for less blade. Held at the end of a long handle with a pizza on it, that difference is the whole feel of the tool.

One weight in that table is marked as implausible rather than printed, and it is worth explaining why. The JIAFUEO listing gives its dimensions as 17.5"L x 12"W x 0.47"Th and its weight as 0.3 kg. A bamboo board of that size weighing that little would have to be less dense than cork. Something in that field is wrong — a packaging weight, or a units slip — so it is excluded from every comparison on this page rather than quietly averaged in. The rest of that listing looks ordinary.

One caution about the numbers attached to those blocks. Amazon pools review counts across a variation family, so a figure shown against a 14-inch peel may be counting the 16-inch one too. We caught it directly here: Ooni’s 14-inch and 16-inch bamboo peels are separate listings with separate prices, and both report the identical rating and the identical review total. 1 of the seven peels is flagged for that in our data, and the honest reading is that others may share a corpus without our being able to prove it.
Where bamboo genuinely wins
Everything above is about launching, and launching is only half of what a peel does. For the other half bamboo is the better tool, and it is not close.
You can build a pizza on bamboo. Dough sits on an untreated wooden surface without welding itself to it in the way it does on bare aluminium, which is why the standard advice for a metal peel involves a constant film of semolina and a fast launch. Bamboo buys you time to top the pizza properly. Then, once it is cooked, you can cut on it — a wheel or a rocker on aluminium sounds like what it is and scores the blade. Both bamboo listings here are sold explicitly as serving and cutting boards as well as peels.
So the honest answer for someone making pizza most weeks is two peels: bamboo to build and serve on, metal to launch and turn with. 1 of the seven listings contradicts itself, and it is worth showing because it is the ordinary condition of this category rather than an unusual lapse. The Chicago Brick Oven peel is titled an aluminium peel. Its Material Type field says stainless steel. Its Handle Material field says aluminium. Its own marketing highlight, on the same page, says the handle is wooden.
Two of those four claims must be false, and there is no way to tell which from the page itself. Aluminium and stainless steel are not interchangeable here — they differ in weight, in stiffness and in how the edge dulls. A buyer reading that listing to decide between materials is reading a page that has not decided either. This is not a bad product; the reviews are unremarkable and positive. It is a bad spec block, which is a different thing, and it is the reason a page like this one exists.
Where a listing disagrees with itself, this site reports the disagreement instead of picking the more flattering side. Buying a 16-inch oven: check the blade, not the box.
